does anyone know how to cut up a rear quarter of buffalo? or ever a site i can go to. i have the two rear quarters in my basement ready to be cut,and need a little help on how to not mess it up.

so what i found out sir was its like cutting up anything else.
removing the hind quarter. you cut between the joint in the hip and then the joint in the knee. you want to cut slabs off that thigh to make jerky to you can cut it also into chunks for like stews or fajita meat, thicker cut slabs would make wonderful flank steaks that will grill up nice after marinating them in teriyaki/worchester sauce.
cant really mess it up. if you make it too small then you have shredded buffalo for sloppy joes
also the meat under the spine and ontop of it is good .
best sinew comes from the sides of the vertibrae

jealous really
I love buffalo meat. I dont eat domisticate critters only game and fish.
need any recipes let me know. still a chef
