I read a bit of advice about 10 years ago that ground venison tastes better when blended with pork fat over beef fat. In my limited experience I completely agree, pork fat over beef fat when blended with venison.

And yes Vince, elk is fantastic. It's tends to be less gamey and closer to beef (but better!) than deer. But then elk favor grazing on grasses over browse, similar to cattle.
