It sounds like you are over-run with does. We have some counties like that (Hill Country northwest of San Antonio), but the state game department will not allow any more to be harvested. Sound game management goals should look at the carring capacity for the land (grazing acres per deer ratio) and the buck/doe ratio. Most high fenced ranch owners that I know will not allow the harvesting of 8 point bucks or smaller, unless they have inferior antlers (older bucks that are spikes or fork horns...enferior blood line). You can kill one large buck (10 points or better) and any of the inferior antlered deer and does to help keep the ratio in check.
