So I made a knife for a farmer that allow me to snipe rabbits and foxes in his farm.

The blade is made of D2 heat treated to 60 HRC - hard enough to slice a cheapy metal file !!
Blade length is about 120 mm (5 inch -ish).
The scale is Allocasuarina luehmannii (Buloke) with red micatra spacer.

Now that looks like a great utility knife! Good looking and small enough to be handy at a lot of tasks and big enough to use to bone with. Beautiful job!

I love your cutlery skills, that knife is another great bit of kit. You have a talent others wish for (Me) .
Yep like Elvis, I can Dress out sheep as well, used to do it for dog tucker on mates farms. You ain't true rural until you've killed and dressed out a sheep using a knife. Bit like sticking a pig to say you're a true pig hunter!

First you field dress a animal when you kill it (remove it's offal and have them cooked as you continue the steps), then you dress the animal properly when you skin it, then you quarter it to make it easier to move around, then you butcher the cleaned sections into your various meats (steak, roasts, even ground meat and sausages etc). Then you eat the good portions of the animal (the offal) that the wife was cooking for you.

Reading my paragraph, that sounds like more work then it really is. Very Happy

Dimitri

OK, as I recall the offal is the belly and internal organs sometimes including the brain. I can see eating the liver and heart but what else do you eat?

I don't do kidneys or brains - I have enough brains in my head and my kidneys are doing just fine so far - no need to add to them. I have been called heartless but that was a while ago and liver, well, I just like liver.

You mean, brain, lung, pancreas, gall bladder, intestine (small and large), stomach, bla bal bla...

Mate, in some society everything is edible, except maybe the hoof, horn and hair.
With deer, and rhinoceros, even the horn are edible.

I eat liver, kidney, lungs, heart, intestines, brain, eyes, tongue, etc.

The belly is what you make bacon with, and gall bladders are for medicine. Laughing

With some animals, I'd rather eat the offal then the meat itself. Very Happy

Only time I eat offal is in haggis...apart from that, it is dog food.
