I wish it was a sow, Vince. Once the boars get above 150 pounds, their meat is tainted with hormones - we call it boartang. They smell as bad on the inside as they do on the outside. My processor fries the fat on a boar as a test. If the frying fat smells good, he will process it. This one was left for the buzzards and coyotes. A big reduction in the local sperm count when I dropped this one.

When the export pork market was strong here top dollar was paid for boars over 100-120kg

My grand-dad would call that Wangdoodle pork when they got too big before being cut.

SJ, these old boars are used in Germany to make sausages because their meat is so dry. You know these red sausages which are smoked and dried (and contain a lot of preservatives - and pepper)?

Aloys, sausage is the only thing he might have been good for but the preference around here is to use to process only the sows when they get above 150 pounds.

yip the best eating pork is a sow under 100lb or a boar under 80lb....Ive eaten heaps of boars in the 140-180lb bracket without issue....there are a few tricks to it....will PM you slim as a tad P.G.

I suspect it has a lot to do with what they are eating. My last bore was well over 300 and it was great eating. Lots of acorns (way too many, getting tired of walking on them, and a bunch of pecans, hazelnut, hickory nuts, persimmon, wild grape, mulberry, crab apples, all planted to feed the critters.However, it's a lot like eating a 5 year old rooster, it's all in the preparation. If I kill it I eat it. Further I have no idea what pigs eat in Texas, so I can't speak to their taste there.

pigs are like rats, they eat everything from ratpoison to horsesh*t.

and you're right: an excellent cook can make a wonderfull dish out of garbage.
When you can start with excellent raw materials, everyone can cook, even me!
But give an excellent cook also excellent raw materials to start, then he/she will prepare heaven...

Well, it has been 10 days so I hiked up to where the rancher dumped this boar. I wanted to see if I could recover the bullet - maybe just laying on the ground or with a few bones that might be left. Usually a hog left for the coyotes and vultures is gone in two days. I was in disbelieve - this boar has not been touched. He must stink as bad on the inside as the outside if no critter will eat him.
