Let it dry age there. When you get it out cut it in 1" thick pieces and cook it medium rare... its unbelievable. Our favorite meat meal of the year, dry aged antelope loin.

A friend who is a big antelope hunter recommend a book for me - "Hunting Trophy Antelope, a Do-it-Yourself Guide" by Mike Eastman. It was invaluable and every aspect he discussed I saw on our trip. I did see one trophy antelope but on private land. A very majestic animal.

I'm back... very tired but back. Soon as gear is all unloaded and I relax, I'll start a new thread as to not take away from Slimjim's cool hunting story.

One aspect that I found interesting is that Pronghorn antelope do have horns but they shed the sheath every year. What your are looking at that appears to be the "horn", is the black hair that grows from their horns, like a rhino, that they shed the begining of winter. This exposes their true horn and then hair portion start growing back for for the next rut season.

Yep, we find sheaths from time to time walking out in the sage. Kindof like finding dropped antlers.
