I just used this method on a pronghorn last weekend and packed the meat a mile back to the road. Remember to start removing the back straps from the neck. I still have to learn how to remove the tenders. 25 mph winds and rain is not the time to learn.

tenders...whip out puku/guts so you can get the heart at same time..... run knife down inside if tenders/eye steaks and they pretty much lift out...very little effort required just keep going till you get every little bit of those mouth watering morsels out.

all knife cuts through skin HAVE to be from inside to out so knife slips THROUGH fur/hair instead of chopping it up into pesky wee bits that go everywhere.

Elvis is correct...Don't cut down. Always cut up keeping the sharp edge up.

when you want to be original you can shave it
thinking about this bacon comes into my mind... when they don't skin domestic pigs that have been sleeping in their own sh.t all their live, why bothering for some hair coming from a shining wild animal? Anything natural that's heated while preparing the meat cannot harm you anymore...

Elvis, I was referring to the gut-less method where you come in from the outside along the back bone. I'll just need to watch some more you-tube videos.

Aloysius...If the cut hair is left on the meat too long it will taint the meat. Causing it to taste bad or awful.

and what about bacon? Domestic pigs are not skinned... bacon is 'skinned' on your plate.
we hang our roedeer a few days in the cooler in its skin (to prevent the meat becomes dry and tough).
I've been told that in South-Africa they just remove the guts (internals) and hang the animal in a tree untill transport picks it up. When we should do such thing here in the Summer, we cannot eat the venisson anymore, maybe we could use the wurms to go fishing...
And why do I remember now something that's been told here, it jumps into my head that a man, while young and in love, could eat his girlfriend/wife with hair and skin. When he's older and finds a hair in his diner he's angry and regrets that he didn't do so when he was young...
