thats a great tutorial.
a method I use is very similar but you gut the animal first.
you then start with a cut continueing up to the throat
start cutting outwards staying down on the bones so the meat stays attached to the skin. you cut the quaters from the carcass but leave them on the skin ,the back steaks are the same.
you end up with a ribcage and spine to dispose of and a neat skin with all the meat attached. dont forget the eye steaks( from inside the gut cavity) the skin can be sat out flesh side up to cool/draped over a pole,branch fence etc works well for this. the skin can then be folded back together flesh to flesh inwards and drapped over your shoulders rear legs one side fore the other to carry it out. no dirt gets on the meat this way and its easy to remove meat when you get home, and you get the skin to tan aswell.

ok when I get out again I will try. I got shown this years ago it works well with a goat sized animal even better.

nope thats what I was refering to.
its not diffacult to do and keeps your meat clean.
the way the quaters are taken off is similar ,the trick is to stay close to the bones. you get all the meat, flaps and all this way so the mince/sausage bucket looks healthy when youve cut it all up.

I need to do a new guide... and NOT use antelope and NOT do it in high wind conditions. Sheesh you couldnt believe the emails I get from people about hair on the meat in my pictures Smile

I was processing some geese on sunday with the help of my 12year old daughter and as I started to breast them out I relized that this is almost the same as how I do big game you start at the breastbone and work outwards!!! Im sure you waterfowlers out there will know what I mean now. I got to go shoot something big to take some pictures... hmmm how to convince she who must be obeyed???
