Got a little grey today . Cooked 'im up and I decided squirrel is the best meat in the world . Fried with pepper and barbecue sauce ..mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm

Yup, with some butter beans, corn on the cob, and big ole cat head biscuits, it doesn't get much better.

Ours started the 15th of Aug. I got one the other day, got him in the freezer waitin on some of his buddies to join. Very Happy

Aaah, the savory tree rat! We have a year round season down here and still nobody hunts them. Too many wild hogs to shoot at.

From what I'm reading here, it appears squirrel is a bit of a delicacy. What is the meat like? Yeah, I know tastes just like chicken...but seriously, is it a red or white meat...dry like rabbit or moist like beef or lamb? I figure that because they eat mainly nuts and seeds they would have a "nutty" sort of flavour to the meat.

Be interested to know.

Squirrel does not taste like chicken.
My experience is mostly - there isn't enough meat to find!
I have had it stewed, jerked (not bad), and roasted. It is a red meat and it takes two or three critters to make a snack. The meat is stringy, tough and tastes like ........ Squirrel!

PaulS is correct. They taste like squirrel. I’ve eaten squirrel before and do not consider them something prized for their eating qualities. In comparison, I would imagine that they would have the flavor of any rodent. Down here, I don’t know anybody that really considers them a game animal. However, if you put a season on them they would probably generate some interest. There are 254 counties in Texas and 51 of them in east Texas have placed seasons on squirrels. The rest of the state has no season or bag limits.

Of all Small game, We prefer Rabbits for good table fare. Quail for better table fare, And for the best we LOVE a bunch of Morning Dove breasts wrapped in bacon and fried with green onion. Very Happy
But by far, the hands down favorite wild game table fare in our home is Elk & Buffalo.
