Nobody kept records back then and I suppose that red tide wasn't as common as it is now.
If you wrap the shell in seaweed and bake it on a fire it doesn't look like snot anymore.

These days I prefer oysters kilpatrick.

Open the shell, drizzle a little Worsteshire sauce in, cover the oyster with a piece of bacon then a little grated cheese on top...put it under the grill. Yummo.
