What does Black Bear taste like to you?

I've found that most first time bear eaters don't like the taste of the meat. Alot of marinating and seasoning is usually required. Usually have salami made out of mine.--tr

It is a little greasy but great as a stew or made like a roast with carrets and potatoes. I really like it.........

I only had a chance to try bear once and that was a long time ago. I thought it tasted much like groundhog, it had about the same consistancy too.

I've never actually eaten bear as a steak or roast. I get all the roasts cured into 2-3 lbs hams (bear is a member of the pig family). The rest is done into pepperoni, beer sausage, salami and smokies. I almost always take a spring bear also, way less fat to deal with. April 15th they open up here and the freezer is very low on pepperoni...... Sniper
