This is what I use for making bacon. It is a dry rub which I prefer over a brine - don’t get near the splatter using this method. I usually use dark rum or bourbon and add about 1/8 tsp ground cloves to the mix as well. Mrs. Wolf has high blood pressure so once cured I will soak the slabs in water for two or three hours (changing the water every hour ish) then pat dry before smoking. The recipe calls for it to go in the oven ... really? It needs to be smoked! The numbers hand written are for a lager batch. Don't know why it turned or how to get it right side up - sorry
