Hey guys thanks for the real answers, I will probably use a torch and scrape the hams and and the shoulders and then skin the remainder.

As far as dressing the hog or sheep, I didn't think Kiwi's liked their sheep dressed, I hear its inconvenient and time consuming. As for Aussies I have no idea what their predilections are for hogs or sheep, but I have heard a few strange things about flyers. Very Happy

Handles, I ain't going there, Bushy seems to have that topic well in hand. wtf

As an aside from the topic its been a couple of days since I have been out of the house, but this morning I'm sitting in my Lazy Boy complaining about Fox News and I look out the front window. There are two deer, and six turkeys, a couple squirrels, and two cottontails eating the corn we set out. Never seen so many different animals at the same time in the same place before, thought it was pretty neat and wished I had my camera. Laughing

Hog hair seems to dull a knives real quick. I always skin/cut from the inside.

Slim you are supposed to do it that way all the time so your blade cuts between the hairs and doesnt cut them leaving pesky short bits to fall on the meat.
Lesterg3 if you only scrape the quarters you miss out on the best bits!!!! pork chops with a nice fatty rind...(trimmed pork just doesnt cut it for me) and the flap left over can be cured into bacon or just added to the sausage bucket to give some fat to venison bangers.

Pig fat instead of cow fat every time, it makes a crispy crunchy sausage or hamburger and lots better flavor, I'm with you Elvis.

I would love to be sitting there beside you Lester...a nice coffee and a camera.

That is one of the things I enjoy about camping in the bush...plenty of wildlife to see.

I've never actually dressed a pig, so how to remove the hair etc is a bit of an unknown for me. Interesting to hear the different methods.

I'm with you Suz...nothing better than pork fat in a snorker...makes them really "moist" and adds a subtle flavour, although wallaby and venison is yummo as well.

Slim, it doesn't matter what the critter is...the hair/fur will quickly take the edge off your knife, even bunny fur will blunt your knife real quick.

yip you get down to start of ribs on a boar and encounter the shield...from there down skin stays ridgid...a tad like a cricket batsmans leg padding and about as thick Shocked . I ignored it on last pig and hoped it would cook up sof Confused t....well the thought was there Embarassed and dogs enjoy the chew toy Very Happy Very Happy
