medium rare, that blue rare looks like a good vet could get it back on its feet!!!!
Ive just recently learnt the value of the steak hammer. It sure does improve a marginal steak by getting it tender.

Just a question that came up on another forum I visit. Wanted to see if the same kind of curve in the responses happens here too.

Same here PaulS! 120 degrees, barely warmer than me! Except I like a bit of salt on it too. That crunchy flaked stuff, some ranch beans and a big whack of bread and butter. Keep the dogs away or we'll have a fight. I don't give up bones easily.

I like the juices just starting to flow...makes for a very flavoursome steak. My son in law has his cooked for 20 seconds on each side on a hot grill...I suppose you would call that blue. I'm pretty sure I've seen some of his steaks flinch and moo as he stuck the fork into them. Very Happy

I had one "Pittsburg style" once that was really good. Just about charred on the outside, rare on the inside.

Medium for me. I hate having to chase my steak all over my plate trying to fork it. Let alone put a knife to it.
