I've seen plans for doing that with an old frig or freezer. I think the catalog was "the Sausage Maker". It was started by an old time butcher, Rytec Kutas. I thought I might do it one of these days.

A guy I work with made one something like this but he used an old hot plate for heat and didn't think of the fan. Working in a cabinet shop we have access to basically unlimited wood and chips. Mostly hickory and cherry.

If I can get it out of my wife we have a great recipe for smoking pork loin, beef, or venison using cold smoke.
