I emailed my webhost asking why our server runs so slow at times... along with some other issues they are resolving I got this response:

Hello,
I just checked the server and it is under a higher than normal load, this is due to Web Statistics updating on the server. These update daily from 5pm - 7pm EST.
This will be changing as we are making some internal changes to the server to allow stats to update on a 24 hour basis thus, the loads will not be effected so much.
You should see a marked improvement in loads on the server by this time next week.

So basically 5-7pm EST and Sunday mornings they currently run some background data applications that make us run slow for short periods of time.
If *I* were in charge there I'd personally run such utilities at like 3am EST when few people are online... but we get what we get until we can afford a dedicated server (really expensive but soon as one of you guys wins the Powerball lotto and give me a million $$$ we'll upgrade
)
The webhost is also currently moving to some new hardware that runs RAID1 ... which for those of you who dont know, writes data to multiple drives at once (mirroring). That basically means if a Harddrive fails no data is lost, they plop in a new drive and keep on going... that also means they never have to do a backup of the data because its written to multiple drives at once... and hence already backed up.
So while the slowdowns are annoying, its brief and over the next little while, will be steadily improving. None of this really matters I guess but I thought I would pass along the info.
