Does anyone have any advice on the set-up of the inside chamfering cutter, on the RCBS 3-way cutter? How much is enough? How to tell? Is it critical or not?

I haven't used the 3-way cutter so I can't offer any pointers there. I usually chamfer the inside of the case mouth just enough so that I think the bullets will start well. I've never measured it, just eyeballed it.
Here is an untrimmed .223 case beside a trimmed case and a trimmed/deburred case.

That is about the way mine look except I don't chamfer the outsid as much - just enough to de-burr it.
Your inside bevel is very close to the depth that I chamfer the inside neck.

Messin' up is one thing, and everyone has done it....myself more than I should have.
It's those that can't recognize the mistake, nor can rectify it before doing it again, that provide the entertainment.......
I use the same old Redding hand cutter that I've always used and give it a quick single spin inside and out...just to get the burr off.
If I can't feel a sharp "edge" there, it's good to go.......
