Deer, Elk, Antelope... I really wish we'd hit the end of the elk personally. Its good stuff but I like a good ole beef steak from time to time.

Dallan, if you're tired of your Elk steaks and roasts, send them over, I have very little Elk left in my freezer. I personally think Elk is better than beef.

Awwww yes. My wife and I celebrated our 20th this last weekend......I took 2 packages of vension steaks with us. We had a little kitchen in the place. I bought her her favorite beef steak. Any while we were out............. the daughter cooked up a huge stew......venison and last of our own potatoes. We'll finish that tonight.
This weekend..........more venison on the grill this time. No matter what the temp. outside I can always do that.
Only have a couple three squirrels left. They will be pot pies later.

Not this weekend but made bear steaks the other day on the grill for my wife and me plus an extra. I used it the next day on top of a salad. Man they were good.

Gidday RPM1031. Is that bear steaks as in grizzly/brown/black big nasty rip yer head off and chomp ya to death type bear? Confused Shocked

If so I didn't realise they were edible, although I suppose any meat can be eaten.

Cheers, Vince

This takes some planning,

4 pound roast

3 Tbls mortons tender quick
2 tbls brown suger
2 tbls ground black pepper
1 tbls garlic powder
1 tsp allspice
2 bayleaves

cover the roast and place in a watertight container like a ziplock bag. turn about once a day. Keep in refigerator. Allow to cure 5 days for each inch of thickness. 3 inches thick, 15 day in the frig.

Rinse and simmer slowly of 4 hours.

The result is nice very good. Excellant sandwiches or a main course. chop it up and use it as snacks. What ever.

I have eaten meat from 4 different black bears, all excellent. In all honesty some of the best meat I have ever eaten.I have heard it said that bears are not fit to eat,not my experience at all.I suspect it may make a difference as to the bears diet when killed. The first bear I killed had a stomach full of wild grapes. The second was eating acorns and corn(I cut their stomachs open to see what they had been eating).Maybe if they were eating rotten meat or other carrion they would not taste so good.

I have never eaten bear........... bare maybe, 8O...... but not bear. What does bear taste like, some have told me it tastes like liver. I've never yet gone bear hunting and here in Sask they say you do not need to keep the meat. I don't know any people that do.

Was kinda surprised to see that many bear eaters. Myself, I've eaten my share of it, but never really developed a strong liking for it. Seems like you either really like it, or don't like it. As for the bears that eat salmon. If I was in a position to get one of them, I believe I would let them eat all the salmon they wanted, and just catch myself some salmon to bring home. Now there's some good eaten. Fresh silvers.--tr

It was more on the line of BoBo for those who remember the cartoon. It was a small black bear. First time hunting bear and "it looked a lot bigger from my treestand." Bear has to be cleaned and skinned out very soon after the kill. The meat is supposed to go bad quickly. I guess the layer of fat keeps in the heat in. I soaked them in brine, changing the water a couple of times, then marinated it for a long time in kind of an italian dressing, oil, vineger, salt, pepper, some herbs. Cooked it on the grill and my wife loved it. It was my first time having bear.

The bears I have eaten haven't tasted like liver, its certainly possible some do.When someone asks me what it tastes like the best reply I can find is something like beef and pork mixed.
