Well folks we have just made up our first batch having bought an expensive mixer by Kenwood so we can mince and stuff them.
we looked for recipies on the net and tootooed with it till it looked about right. the meat balls I just made from the mix tasted great.
5lb venison
1lb mutton skirt
5tblspn salt
2tspn pepper
2tspn paprika
2tblspn cider vinegar
2tblspn brown sugar
2 tblspn tuscan seasoning
4tblspn cornflour
2tblspn crushed garlic
thats it I will let you know how they taste when we cook up some tonight.

very nice, mild so may up the seasoning next time/batch. wouldnt eat more than 2 per sitting as very filling. all up a sucessful undertaking.

Well done Elvis. I take it the mutton skirt was to give the venison a little fat filling? Give some consideration to a bit of wild pork with the venison...have a mate who swears by the mix.

we have loads of mutton and pork is harder to come by but yes is better for bangers. it is to add fat as you need 25%or more to get them right.

just mixed up another 15kgs/33lb to case up this arvo...that is if the teenagers dont scoff it all as mini meatballs before then!!!!
didnt measure a thing this time other than weight of meat and got it smack on for taste.

sheeps casings are too small/tight Mad Mad
saved them from last sheep we killed but they only make breakfast/frank sized sausages Mad
talk about exercise in frustration.
will buy some hogs casings from butcher to do the other 13kgs Embarassed Embarassed

That looks and sounds really good Elvis, I'm gonna have to try it. I'd throw some in the smoker too. I'm with Vinnie, I like the pork fat too. I put pork fat in my ground venison and it gives it a nice crispy fry. Natural casings are hard to find on commercial sausages unless you get the breakfast ones, but there's no other way to get them to smoke good. I have a couple pounds of ground elk to experiment with, this'll be a good treat.

did a huge batch of these with last 3 deer,65lb......did the mixing in of herbs etc with boat oar in big plastic tub LMAO they turned out great.
