Chillers are coolrooms we hang the carcases in before processing. Most used for human consumption. Carcases are gutted in the field the moved to chiller and hung till chiller full then sent to process works. Used to send a lot overseas, but now only domestic market as the supply of rabbits is no longer stable enough to get the numbers, also most went to China, now farmed over there in a big way. Skins were sent to hat factory in Kempsy NSW, Akubra, they now get their skins from big european rabbit farms. Ours go to the rubbish dump because cost too much to dry and hang then ship off. Not enough return to be make it a viable market

Hey Elvie, theres some company down your way that actually sends processed farm shot rabbits up north to Jafa land so the rich and obnoxious can have wild wabbit.
For all you non NZers Jafaland is another name for Auckland. About 1/3 of NZ population live in greater auckland area - Jafa stands for "Just another Fn Aucklander"

well Radar there is hope for us yet. I wonder how much MAF red tape is involved. If we could only work out a market for possom carcasses and get ban on spotlighting on DOC land lifted we could really make inroads into the population.

Yep Stovie, they been feeding corn to chooks and ducks to make them taste like corn and go yellow, you get grass fed cattle and sheep so they taste nice, so why not ham, cheese and onion rabbit, you are right it would save on the effort to stuff them
