So I am just about done making my first batch of Orange Marmalade, got a 2nd one to do today as well.

Tastes good, but anyone else into preserves?

Made Candied Cherries today but ended up with more syrup then fruit. Embarassed

My dad does it. When I go see him I always load up on stuff I love his 7 day pickles I have bin kickin around doing it for a couple years and just haven't done it but I want to. I'll see if I can find the recipe for the pickles there great Very Happy

I do all the food preservation at my house. My family always did it. My wife's family didn't. My wife helps me though. I do jelly, preserves, canning, freezing, drying and storing everything. I'm still eating onions (or rather, my wife is still eating onions) grown last winter (from the crop planted January 1, 2008. We like to freeze about 250 to 300 ears of sweet corn for the year. I'll put up most vegetables, if they'll freeze or can well.

Well the syrup of the cherries kinda got too hard I think I over heated the syrup when I was making it.

Yes, there's a point during the cooking process where the syrup turns to jelly, followed by a point where it turns to candy.

The wife and I have been talking about this, unfortunately, the craft was never passed on to either of us. My grandmother canned like crazy and my mom and dad did a fair bit as well, but either we were not at the age where we wanted to learn at the time or something along those lines. It is too bad as it seems to be a diminishing art - but really makes a lot of sense.

Just about any form of self-sufficiency is a dieing art, whether it is loading ammo, canning food, or even making something as simple as butter; hardly anyone I know (except for rural people), knows how to do anything anymore. Most of my workmates think my wife and I are unusual because we cook everything from scratch. They call a repair man for everything that breaks down. It bothered me (because I like to do everything myself) when I had to call in an installation person to install a new HVAC system in my home. I just didn’t have the license to purchase the new type of Freon to charge the system with.
