Filet 4-6 whole duck breasts (depending on size and how many you need to feed)

Take filets and slice into 1/2" wide strips

Mix one pkg fajita seasoning (not fajita marinade), a few splashes of liquid smoke, garlic (minced or powdered) to taste, pepper to taste, 1/2 tsp cumin, 1/4 cup oil (you chose), juice from 1/2 lime or more.

place the duck strips in the seasoning mixture and let sit at least one hour (longer is better and overnight is ok).

cut in half and slice one large onion

heat about 4 Tbsp of oil in a large pan on med-high.

cook onions and peppers, remove.

add meat and cayenne pepper (to taste if you like spicy food). add more oil to pan if needed.

cook and toss regularly until the meat is brown on the outside and just pink in the middle.

serve on browned flour tortillas with your choice of cheese, salsa and whatever else you like.

Spanish rice, beans, salad are good sides.

Make sure you don't over cook the meat as it will become dry. If the meat is done before the onions/peppers just pull out the meat and continue cooking the onions/peppers until done.

you can easily double the recipe if you need to but don't get too much into the pan.
