You would need:
- a nice size dutch oven (at least enough to fit the leg of kangaroo in it.)
- some Aluminum foil to seal the oven
- a good size spade (or similar tool)


Ingredients:
- Medium size leg of kangaroo (skinned)
- 2 bottles of beer (or half a bottle of red wine)
- 2 large table spoon of butter or margarine (butter tastes better to me)
- 2 medium Carrots cut round about 10mm thick
- 3 large Potato quartered
- 1 small Lemon (1/2 quartered and 1/2 squeezed for juice)
- 2 medium onion (quartered)
- spices (eg. oregano, pepper, chilli etc to taste)
- salt to taste

Preparation:
- rub the spices and salt onto the leg of kangaroo
- Lay the leg in the oven, then work all the veggies onto spaces available
- pour the beer (or wine) into the oven.
- squeeze the 1/2 lemon onto them
- close the lid and cover/seal around the lid with aluminum foil enough so ash did not get into the oven, and minimize the escape of moisture

Cooking:
- dig a hole about 30cm deep at about one and a half diameter of the dutch oven
- make a wood fire in it and wait till you get enough charcoal to fill the hole.
- with your spade, dig the charcoal out from the center of the pile about the size of the dutch oven.
- put the oven in the hole you just dig
- cover the oven with the dug out charcoal.
- leave them to cook for about 2 - 3 hours (go shoot something)

- dig the oven out and eat!

Best done for supper on winter..
