I'm living in nature, and cook wild boar that I kill, but I want to be able to make jerky to be able to keep meat without refrigeration. I still need to heat it up to at least 180F so it kills most everything to protect myself from things such as E Coli. Can meat that is very well cooked be kept similar to jerky? Or need to be reheated? Or can that very meat cooked be sliced thin and dried with fire to jerky?

Welcome to the Forum Skyler. Grab a beer and pull up a stump mate.

Its my understanding that meat once cooked can still go rancid, even if refrigerated...depending on the fat content. Jerky from memory has no fat on it, so to be totally honest mate, I don't really know.

In days gone by they would salt down the meat, which would allow it to keep, but I am unsure whether or not wild hog meat can be "jerked".

There are a couple of guys on the Forum here who make a bit of jerky...maybe they are in a better position to answer your question.

Yes you can,
Just go to any asian supermarket, you can find pork jerky from cooked pork.
They also have fat on them..
Beats me how to do it though..

Umm.. an yeah.. welcome!!
Grab one of Vince's beer if he havent offer one to you..
make sure you keep the esky lid closed, we dont want warm beer here..

I was under the impression that jerky had to be dried, fat free and salted. The early pioneers used "salt pork" as storage meat. They used it in beans and other "water" dishes to get rid of some of the salt because it was too salty to eat as stored. If meat has fat it has to be pickled to store well. That would produce "salt pork".

I cook Jerky with the fat still on it, then again I eat it all in a day or 2, so it may not matter.

They sell at stores slow cooked and smoked/dehydrated pork here so I cannot see why it cant be done. Its sure nice and tender.

I've made beef and deer jerky before but never wild hog.

Most of the processed jerky found in stores today is loaded with preservatives and vacuumed sealed to keep it "fresh". A 100 years from now that stuff will probably taste the same as it does today. Laughing
