Lester, here bones are thrown away, or put in a soupe or the real cook will heat them for about 30 minutes in an oven of 220-230 °C till they are black and then they go in a cooking pot with some vegetables and herbs cooking for a very long time till you have a "fond", which will be used afterwards when preparing the meat.
