Not sure about NZ, but wild game is not allowed to be sold here in Canada period. Due to the fact that 1) the Crown technically owns it and only allows you to hunt for it for personal use, 2) There are inspection requirements that go back all the way to the location where it was born which cannot be monitored on wildlife, and finally 3) To prevent poachers, and add a extra charge if someone is caught profiting from wildlife.
So we farm deer etc here too so that people can sell you deer jerky etc.

Cow elk smell, no doubt. Bull elk however are downright rank and disgusting. Come rutting season, they find a muddy area then pee and poop in it then roll around... day after day. Some of those things get just terrible. They are nick-named "big stinkys" around here.

Axe is for little boys, and they ALL smell like that shit to the point girls don't even notice it anymore. Walk into a classroom at a local highschool and all you smell is that shit because every single boy has it on.
But I must say that smart people use Old Spice.

UGH...that sounds disgusting. Does it taint the meat or is it just for "deodorising" in order to attract a doe, or scare off other bulls? I know with the fallow deer we are careful when skinning them to not cut into the scent glands on their legs...do elk have the same or is the wallow smell peculiar to an individual because of his urine and poop smells?

Cow Elk think its sexy I guess. Doesnt taint the meat, as long as you carefully skin it so you dont contaminate it.

Vince billy goats do it to they just pee and other things on their pizzle patch. red stags do this too so do Sika . we have deer in farms and have done so since the 60s or early 70s the first ones had to be shot and sold as game meat but we have slaughter houses for them now and most venison on the market comes from farms. the velvet industry is worth big $ too. deer are considered pest species unfortunately our government hasnt managed to wake up and smell the doggy doos yet but we are working on it. thar have been given a standing and deer will soon too.30 deer at a time may just about be feasable on private land where numbers have been allowed to build up. Ive been hunting since I was a teen and have never seen a herd of more than 10 animals and that was on a no hunting farm on DOC land the most deer I have seen together is 4.
