My strategy would be to get him into a .243 that is relatively cheap to shoot and reload, with low recoil, so that he can put lots of rounds downrange each time he's at the range.
You probably want your son to become a good rifle shot, to learn about trajectories, holdover, etc, and eventually to reload his own ... with a .243, the kid will be able to shoot more often, both at the range and in the field - think varmints. :-) IMO, going big game hunting with a large caliber once or twice a year is a slow way to learn marksmanship skills, etc.
A .243 will handle the smaller big game, teach him good habits, and still be useful for the rest of your son's life. He can always buy his own 7mm or 30 cal when he gets older and wants to hunt moose, elk or bear.
Have you guys thought of also getting into smallbore silhouette? Great fun way to hone one's skills.

I took my first cow with a .243 my 10 yr. old son now shoots it I wouldn't suggest it for elk hunting but it can be done, with youths here in Colorado until they are 18 a mentor must be with them so be ready to finish off an elk with your larger caliber rifle if the need arises. I had to do that with my little cousin 3 years ago he shot a cow at about 175 yards with a .243 she flinched but took off like her butt was on fire I jump up and knocked her down with my .06 when we took a close look at her my cousin hit her pretty good but the penetration was a lot less than desirable the round deflected off a rib punched a hole in the tip of one lung and came to rest in the diaphram and belly fat. He is 16 now and shoots a 7mm now and with a little more experience he is always ready to put a second shot on an animal, lol.
